This was the first food item of 2012 that made me feel Christmassy, and far too early but who cares when it tastes that yummy. A layer of cinnamon, nutmeg & ginger coated apples and plump dried fruits sandwiched between layers of oaty brown-sugary crumbly crumble. Thinking about bagging these babies up and giving them as Christmas presents.
Apple Crumble Bars
These are fantastically Autumny and really put you in the mood for the Winter ahead with lots of delicious spices. All of my family strongly approved of this cake and are already asking for me to bake it again. I imagine it would taste fantastic as a warm desert with icecream or custard too. You can use any type of dried fruit you like for this.
200g plain flour
1tsp baking powder
1/4 tsp salt
200g unsalted butter
250g soft light brown sugar
120g rolled oats
300g eating apples - Granny Smiths work well, but it works with any!
4tbsp cornflour
3tsp cinnamon
1tsp nutmeg
1tsp ginger
175g currants - other dry fruits well work too, I used mixed fruits with cherries in.
Preheat the oven to 170°C and line a 22 x 31cm baking tray with baking paper.
Sieve together the flour, salt and baking powder, then rub the butter in with the tips of your fingers until crumbly.
Stir in the sugar and oats. Put half of the mxture into the base of your tray and push down until it is evenly distributed.
Peel, core and slice the apples thinly, then toss them in the cornflour and spice mix until they are completely covered.
Lay the sliced apples on top of the base in the tray, then sprinkle with currants or your chosen dried fruits, followed by the remaining crumble mix. Press down gently.
Bake for around 35 minutes, or until the crumble is golden. Cool entirely in the tray. Slice. Eat.
