I can't even tell you how well this butterscotch cake goes with a cup of tea or coffee. It's perfect if you've got the in-laws coming over and want to impress without spending a fortune or putting in too much effort. I love walnuts in this cake but if you don't like nuts, try using dates instead.
Mix it, roll it, bake it, put all your love in it - Cake... such a simple thing that brings so much happiness and appreciation to others. Banoffee Bread
Is it me or can banana bread be a little boring at times? I thought, I know what would spruce banana bread up a bit, how about chucking in a whole tin of Carnation caramel? Did it work...oh yes! So here I present to you, "Banoffee Bread".
Oh, and don't even think about chucking away those old brown bananas in the bottom of your fruit bowl. The browner your bananas, the sweeter your cake will be.

Sticky Ginger Marmalade Loaf
I had a slice of a marmalade cake at a coffee morning last week and loved it, but I really wanted more marmalade, so here's my own version which is stuffed full of marmalade, ginger and walnuts, with a really thick sticky layer of marmalade on top. Try to find a thick cut marmalade with loads of orange rind in it if you can. I used a posh looking ginger marmalade which I found in M&S.

Bara Brith
This is a traditional Welsh rich tea bread, which I had never heard of until recently when my mother posted me her lifetime stash of recipes collected from old magazines (thanks mum!). I have never found a cake so easy to make, the hardest part is remembering to soak your fruit in tea the night before. It reminds me of malt loaf, but the texture is so much nicer. It's moist without being too sticky, soft yet dense, with delicious tea-infused plump fruits. This really is the perfect afternoon tea cake.
