I think that lemon and ginger work so well together, and the addition of blueberries make these cheesecake slices taste extra fresh and fruity. This yummy recipe uses ginger nuts to make the crunchy biscuit base. This is a really simple recipe that you can whip up in 10 minutes or so, just make sure it's nice and cold before you serve it. And like a proper cheesecake, it's nice served with cream. It helps to have your cream cheese at room temperature before you start.

I'm bored of putting pastry leaf decorations on pies. So I thought really hard about what else I could put on a pie... then I thought about eating pie... and then I thought "mmmmm pie".

I do love Apple and Blackberry pie, but sometimes I think fruit pies are a little bland. Try adding a few knobs of stem ginger to your fruit pies. Just chop it up finely and chuck it in for a bit of added spice and flavour. Delicious.

I had a slice of a marmalade cake at a coffee morning last week and loved it, but I really wanted more marmalade, so here's my own version which is stuffed full of marmalade, ginger and walnuts, with a really thick sticky layer of marmalade on top. Try to find a thick cut marmalade with loads of orange rind in it if you can. I used a posh looking ginger marmalade which I found in M&S.

It's only one week after Christmas and I have already consumed all of my edible Christmas presents, so I decided to fill the void by making my own goodies! Florentines are a great way of using up all of those left over dried fruit and nuts in your pantry, and they're not even that tricky. You can mix and match any flavours you like so go crazy and see what combinations you can come up with.

I chose white chocolate with cranberry & macadamia, milk chocolate with pecans and cherries, and dark chocolate with stem ginger, walnuts & almonds. Yum.
