Mmmm, my favourite pudding in cake form. I think I prefer this to an apple crumble, as there's more cake and a lot less apple peeling to do! This cake takes less than 15minutes to prepare, then 40minutes to bake - perfect timing for getting a meal ready in the meantime and serving it warm for pudding with vanilla icecream. Simple and yummy, this is one that I bake again and again.
Mix it, roll it, bake it, put all your love in it - Cake... such a simple thing that brings so much happiness and appreciation to others. Caramel Apple Pie
What to do with those left over Bramley apples...crumble or pie? Husband picks pie, so here it is. This is slightly different to a traditional apple pie recipe in that the apples are partially cooked in a buttery caramel before baking in the oven. With big ole' Bramley apples being so tart, I feel that they need something a little extra to bring out their potential and make them as delicious as their sweet apple cousins.
Oat and Raisin Cookies
Oats and raisins, a match made in heaven and also slightly nutritious (well I like to think so!).
I love these cookies at any time of day, they are my all time favourite cookie and they just so happen to be massive. For this reason, they do great at cake sales. You can eat them for breakfast, dunk them in your tea for elevenses, have as an after school snack, or make an icecream cookie sandwich for pudding.
This recipe will make you at least 20 cookies. If you like your cookies gooey, make sure to take them out of the oven as soon as they start to go golden on the edges. It also helps to use really plump fresh raisins, not the neglected ones in the back of your cupboard.

Honey & Pear Showstopper
As some of you may have heard I have an audition for a certain baking competition next week. Here is my practice run at what I hope is a show stopping cake. The layers of caramalized pears and the honey flavoured cream cheese icing make this cake a sweet tooth's delight. The husband (my most hard-to-impress critic) nodded his head upon tasting this cake so I know it's nearly there. Once I have perfected the recipe I will gladly share it with you.

Cinnamony Apple Crumbley Yummyness
This apple crumble slice lasted only a couple of hours before being wiped off the planet by a hoard of hungry cake eating monsters... oh wait, come to think of it, I think I ate most of these myself.
This was the first food item of 2012 that made me feel Christmassy, and far too early but who cares when it tastes that yummy. A layer of cinnamon, nutmeg & ginger coated apples and plump dried fruits sandwiched between layers of oaty brown-sugary crumbly crumble. Thinking about bagging these babies up and giving them as Christmas presents.
