My lemon curd swiss roll with fresh cream is a completely yummy and refreshing pudding. You must make the effort to make your lemon curd from scratch - it's so easy to do and so much nicer than lemon curd from a jar. It's very easy to eat more than one slice of this cake in one sitting...

You can freeze this sponge for up to 3 months. Just wrap it tightly in baking paper, then cling film. Defrost it thoroughly before serving in thick slices.

I think that lemon and ginger work so well together, and the addition of blueberries make these cheesecake slices taste extra fresh and fruity. This yummy recipe uses ginger nuts to make the crunchy biscuit base. This is a really simple recipe that you can whip up in 10 minutes or so, just make sure it's nice and cold before you serve it. And like a proper cheesecake, it's nice served with cream. It helps to have your cream cheese at room temperature before you start.

Now. If you're not going to make your own lemon curd, don't bother to make this cake. It is ALL about the lemon curd! I am one of these people who thinks, "I've not made that before, it must be difficult, so I'll just buy it"... but it is easy and it's worth it! Plus, the lemon curd takes exactly the same amount of time that the cakes takes to bake, so it stops you getting bored whilst your cake is baking. Nothing can compare to the fresh zestyness of homemade lemon curd.

Lemon Pudding

This heart warming lemon pudding is oozing with lemonyness. It is chewy on top, with a fluffy custard-like center, and a creamy surprise lemon syrup at the bottom. I  recommend trying this one for a simple and light pudding. You could also make it in individual ramekins for dinner parties. This serves four people (or in my house two very hungry people).

Lemon & Poppy Seed Cake

Another delight from the Hummingbird Bakery Cookbook. This Lemon and Poppy Seed cake tastes like a lemon flavoured cloud and melts in your mouth. The sponge has stiff egg whites whisked into it which gives it that light and airy texture. It then has a lemon syrup drizzled into the sponge whilst it's still hot which makes it super moist and tangy, but if that wasn't lemony enough then how about some lemon icing drizzled all over the top. I definitely recommend giving this one a go (You can get the recipe books from John Lewis or even cheaper on Ebay).

A layer of lemon pastry, a layer of jam, a layer of frangipane with seasonal blackberries stuffed all over it, not forgetting a generous sprinkling of delicious crunchy almonds.

These slices are light yet have just the right amount of decadence to fill that "I need cake" hole. They'll also fill your house with a wonderful lemony scent.

...Now my husband always complains that I put too many nuts on my cakes, but I just can't get enough of them! You can make it as nutty or as un-nutty as your taste buds require.
