Easy Mississippi Mud Pie

Easy Mississippi Mud Pie
Often I find myself craving something bad... and this is what I make to fulfill that desire. This is a good pie for men to make - they get to look all manly as they bash up the biscuits with a rolling pin. That and it's so easy to prepare - even my husband can make this all by himself. It's rich, chocolatey, and a fantastic dessert served cold with whipped cream. If you want a chocolate base, use bourbon biscuits instead.

Hot Cross Bun Bread & Butter Pudding with Dark Chocolate

Have you been over ambitious with the Hot Cross Buns this Easter and bought more than you know what to do with? Here is how to get rid of them in the most deliciously possible way... How about bread and butter pudding, made with hot cross buns and dark chocolate! It's so easy and so scrummy. Go on, give it a go this Easter!

Apple Crumble Cake

Apple Crumble Cake
Mmmm, my favourite pudding in cake form. I think I prefer this to an apple crumble, as there's more cake and a lot less apple peeling to do! This cake takes less than 15minutes to prepare, then 40minutes to bake - perfect timing for getting a meal ready in the meantime and serving it warm for pudding with vanilla icecream. Simple and yummy, this is one that I bake again and again.

Steamed Treacle Sponge

Steamed Treacle Sponge PuddingNow, who said that the steamed pudding needs re-inventing, I like it just the way it is! Here's a good old fashioned "proper" English pudding that's great when you don't have much time, or when you don't have anything in the way of exciting ingredients in the cupboard. It's one of the few puddings that is loved by everyone from young to old, not to mention the added bonus of only taking 10 minutes and a couple of quid to make. You really can't go wrong with this all-in-one recipe, just make sure that your butter is at room temperature before you start so that it's nice and soft. RHN2ZG2Z6CGJ

Very Lazy Banoffee Pie

Banoffee Pie with Cream Cheese
This is a pudding that you can literally whip up in about 10 minutes. There isn't even any baking involved. Despite this, it's still a delicious last minute dessert that will definitely impress. My version uses cream cheese to make it a lot less sickly than a regular banoffee pie.

Lemon Pudding

This heart warming lemon pudding is oozing with lemonyness. It is chewy on top, with a fluffy custard-like center, and a creamy surprise lemon syrup at the bottom. I  recommend trying this one for a simple and light pudding. You could also make it in individual ramekins for dinner parties. This serves four people (or in my house two very hungry people).

Caramel Apple Pie

What to do with those left over Bramley apples...crumble or pie? Husband picks pie, so here it is. This is slightly different to a traditional apple pie recipe in that the apples are partially cooked in a buttery caramel before baking in the oven. With big ole' Bramley apples being so tart, I feel that they need something a little extra to bring out their potential and make them as delicious as their sweet apple cousins.

Tarte Tatin, with Salted Caramel!

Salted Caramel Tarte Tatin
This tarte has only five ingredients and oh... my... word despite the slightly "rustic" appearance, it is the best pudding I have ever had (yet another recipe posted to me by my mother). I used pre made puff pastry to save time so the hardest part about this tart is the caramel. My third attempt turned out allright but I could have gone browner. It's a fine line between fudge and burnt treacle, time to invest in a sugar thermometer...
