Just whipped up a quick birthday cake for the husband - Chocolate mud cake with hazelnut coffee syrup drizzled into it, something I never thought of doing until now.
This is a great way of adding more moisture and another dimension of flavour to any dense sponge cake like this. Once your cake has cooled, slice the top off for a nice flat finish, then drizzle in a few tablespoons of your chosen flavour syrup into the sponge and allow it to soak in before icing it. You can easily make your own chocolate syrup by boiling together water, sugar & cocoa powder, or here is a recipe for ginger syrup. Alternatively, just buy some. I have found syrups such as caramel, chocolate, hazelnut, creme brulee, gingerbread, cherry, banana, and all sorts of other crazy flavours, strangely from the cafe in Dunelm. You can also buy them from some Costa Coffee shops. This is really great especially when you overcook your cake due to the distractions of children (not through any fault of your own!). I will be doing this with many more cakes from now on!
