Chocolate Fudge Brownies
Just when I thought I had already found the perfect brownie recipe, I tried this recipe. It just proves that you can never find the ultimate brownie, there will always be one to top it. But sod it, I will endeavor to strive for perfection! I love making brownies because they are a one bowl, one tin recipe. Minimal washing up! These brownies have the perfect texture; they are perfectly gooey on the inside, and crunchy on top. The best brownie, and so easy to make.


Ingredients
makes 12 slices

400g plain chocolate
225g butter
225g caster sugar
3 eggs
1tsp vanilla extract
2tbsp strong black coffee
100g self raising flour
100g pecans or walnuts, chopped
100g white chocolate, chopped

Preheat the oven to 180ÂșC. Oil and line a 28x18cm tin with baking paper.

Break the plain chocolate into a heatproof bowl and add the butter. Melt in the microwave on a low heat or set the bowl over a pan of boiling water.

Stir in the sugar. Now add the eggs, vanilla and coffee and stir until well mixed. Fold in the flour. Finally, fold in the nuts and chocolate.

Pour the mixture into the tin and spread it out evenly. Place in the centre of the oven and bake for approximately 45minutes, until the top is crunchy and the center is firm but still moist. Leave to cool completely in the tin before lifting them out and slicing.

Top Tip: If you find that your brownies are crumbling when you slice them, try refrigerating them first then cut with a hot clean knife.

    1. It makes 12 generously sized wedges. You could cut it into smaller squares if you wanted to though.
