Easy Mississippi Mud Pie
Often I find myself craving something bad... and this is what I make to fulfill that desire. This is a good pie for men to make - they get to look all manly as they bash up the biscuits with a rolling pin. That and it's so easy to prepare - even my husband can make this all by himself. It's rich, chocolatey, and a fantastic dessert served cold with whipped cream. If you want a chocolate base, use bourbon biscuits instead.


Easy Mississippi Mud Pie
Ingredients

For the Biscuit Base:
200g digestive biscuits
100g unsalted butter
50g demerara sugar

For the Filling:
260g plain chocolate
150g unsalted butter
1tbsp instant coffee
1tbsp boiling water
200ml double cream
230g dark muscavado sugar
4 eggs

To Serve:
150ml whipping cream, whipped
grated chocolate

Pre-heat the oven to 180°C and lightly grease a 26cm tart tin or loose bottomed cake tin. Place the tin onto a larger baking sheet in case of leaks.

Start by making the base. Put the biscuits into a sealed plastic bag and bash with a rolling pin until they are reduced to crumbs. Melt the butter in a small bowl then mix in the biscuit crumbs and sugar. Press the biscuit mixture into the base of the tin using the back of a metal spoon.

Now for the filling. Melt the butter and chocolate together in a large bowl (either gently in the microwave or over a pan of simmering water). Mix the instant coffee with the hot water then add this to the chocolate mixture. Once everything has melted, remove from the heat and stir in the cream, sugar and eggs. Mix well.

Pour the mixture over the biscuit base then bake in the centre of the preheated oven for approximately 1hour, or until is has just set in the middle. Leave to cool before removing from the tin. Serve with cold whipped cream and grated chocolate over the top.
