Peanut Butter Cookies
Oooooo these are good. Crunchy on the outside, gooey on the inside cookies with crunchy peanut butter, chunks of dark chocolate and wholesome oats. The combination of saltyness and chocolateyness is what I think makes the tastiest, most addictive "I need another one" cookie. If you want a more wholesome cookie, use raisins instead of chocolate. Go on, give these a go, it'll make your family and friends happy all weekend.



Ingredients
Makes about 18 cookies

115g unsalted butter, softened
115g crunchy peanut butter
115g golden caster sugar
115g light brown soft sugar
1 egg
½tsp vanilla extract
85g plain flour
1tsp bicarbonate soda
¼tsp salt
115g rolled oats
50g dark chocolate, chopped

Preheat your oven to 180°C and grease or line 3 large baking sheets.

Beat the butter, peanut butter, and both sugars together until pale and fluffy. Mix in the egg and vanilla. Sift in the flour, bicarbonate and salt and mix until just incorporated. Finally, fold in the oats and the chocolate.

Spoon out equally sized amounts of the cookie dough onto your baking sheets, then flatten into a nice round disc with the back of a fork. Bake in a preheated oven for approximately 12 minutes, or until the edges are just starting to go brown and crispy.

Remove from the oven and leave to cool on the trays for 5 minutes before transferring onto a wire rack.
